If there is one fruit that is in evidence it is the avocado. Consumption has been increased both by nutraceutical qualities, avocado is very rich in lipids or fats good for health, excellent source of fiber and several vitamins, in addition to having a very low sugar content which makes it good for people with high blood glucose . Numerous scientific and journalistic articles attesting to the good qualities of avocado are constantly published. There are also many culinary possibilities for the fruit, which can be consumed as is common in Brazil with sugar and lemon or in savory dishes such as the traditional guaca mole. On the one hand, consumption increases, on the other, the planting of new orchards has been intense. In order for consumption to continue growing, product quality must be guaranteed.
The Section of the Hortigranjeira Quality Center (SECQH) in a partnership, still informal, with the Brazilian Association of Avocado Producers (ABPA) will collaborate with the avocado production chain. The São Paulo warehouse is the main commercial location in Brazil. The largest licensees in the avocado trade are interested and collaborating with the research. The section that takes care of the research at CEAGESP will carry out between February 2021 and January 2022 the evaluation of avocado dry matter content at CEAGESP in order to research and identify the average amounts of dry matter of the main varieties throughout the year .
The dry matter content has shown to be an excellent option to estimate the degree of ripeness of avocados and their yield, aiming to improve the quality of the fruit. The fruits harvested with low levels of dry matter do not ripen perfectly, show uneven skin color, early wilting, non-soft pulp and, mainly, bitter taste. One of the biggest problems facing the avocado chain today are producers who insist on harvesting immature fruits, unable to ripen, to take advantage of high prices. But this practice, if it is not combated, will certainly hinder the growth of consumption.
